Workout: 20 minute HIIT routine from Tone it Up
A combo of this + Monday's kettlebell workout had me SUPER SORE by the evening. My shoulders & legs certainly were feeling it from these quick workouts.
9:00am: Breakfast- Banana Date Smoothie Bowl
I am a woman obsessed.
11:30am: Snack- Almond & Coconut KIND Bar
2:00pm: Lunch- Watermelon Salad
In the mix:
- Drizzle of olive oil & shake of sea salt
- Feta Cheese
- Diced watermelon
- Diced Basil
3:30pm: Snack- Cheese Stick & 5 saltine crackers (no pics...oppps)
6:00pm: Dinner- Naan & Hummus
Well, it's been a HOT minute since I've made this dinner...but when dinnertime rolled around last night & we wanted dinner MADE IN A MINUTE, I turned to this old bad bear 'recipe.'
Whipped up with the help from Trader Joe's hummus & frozen garlic naan. And since Tabbouli was not to be found on the shelves, I subbed in this salad with sorta similar ingredients...
1-minute heated garlic naan- Check.
Bulgur Fattoush Salad: Check check & check!
I said my Mexican quinoa might have been my quickest, healthy dinner...but this one has even THAT beat on the clockJ And it's positively BURSTING with flavors from the garlic naan & bulgur salad filled with onions, tomatoes & goat cheese, all while being super filling from the protein in the hummus.
And to round out dinner, we had our standard QUICK SUMMER SIDE of WATERMELON....with crumbled Gorgonzola. Cause I was feeling sassyJ
8:00: Dessert- Coconut Macaroon
Which, thankfully, Katie & Scott helped me dissect this boulder of coconut goodness so I didn't devour it all myselfJ Sublime yumminess (thanks, Mom!)
Annnddddddd....it was about an hour after that dessert that I turned in for the night with the plan of reading MANY pages of my new book, only to find the hardback nearly falling in my face within minutes. Does this happen to anyone else??? Did anyone else's significant other ALSO find them fast asleep once with a book on their face??
I mean, not that that's EVER happened to me. I have no idea what I'm even talking about.
