8:00am: Coffee with eggnog creamer
Ummmmm...blame this one on being REALLY hungry and seeing it on the top shelf of the fridge and knowing it was a 1:30 minute trip in the microwave to completion. Ironic, since I talked about how I was going to find something 'healthier' than Mexican chocolate bread for breakfast...J
10:30-11:45am: Power Yoga
I survived, despite my ridiculous breakfastJ
2:30pm: Snack- Kale lettuce blend with olive oil, salt & a 90 calorie cheese
Here was my attempt to restore some balance to my day...oh yeah, and some GREENERY!!!!
5:00pm: Dinner- Spaghetti & Meatball soup
And since I felt like I needed to kick it up a notch in the veggie department at the end of the day, along with an onion, I sauteed 2 shredded carrots & zucchini each...
The shreds blended so well with the noodles that, if you're going the no-carb route, you really don't even need noodles in this soup. (Although I added about 1 small handful, broken into thirds.)
Along with the veggies, you added 1 container of chicken broth, a 28oz. can crushed tomato & a 15oz. can of tomato sauce....
...along with mini turkey meatballs that cooked right in the soup.
Warm & very hearty, this is the perfect soup to combat those cold winter nights we are ALREADY having (not that I'm complaining! I'll take this over humidity ANY DAY!) The veggies added great volume & nutrition to this dinner and you really can't even tell they're there when paired with spaghetti & meatballsJ Katie LOVED this too!
5:30-6:30pm: Body Jam
Afro Circus Jam might be my very favorite release (right next to Kicking & Screaming!). The music is so good that I think my feet barely touched the ground the whole timeJ
8:00: Dessert- Mexican Chocolate Bread
No surprise here! I couldn't have jumped out of the shower fast enough to have dessert last night!
Alrighty, well I'm outta here. Excited about having a Christmas-y night with my Mom & Katie tonight! The only downside is Scott is working OUTSIDE and OVERTIME tonight! Eeeeeeeee. Considering today's HIGH is 28, it falls right into the category that his biggest outdoor work projects only happen on the HOTTEST AND COLDEST days of the year...boo.
