Post-holiday "detox day" :)

Monday Recap:

8:00am:  Coffee with PEPPERMINT MOCHA CREAMER! J

9:30am:  Breakfast- Honey Nut Oatmeal Squares with 2%

12:30pm:  Lunch- "Happy Salad"
Never failsJ  I'm always happy when I have this combo of arugula, trail mix, 2% cheese, olive oil and a shake of saltJ

2:00pm:  Snack #1-  Coffee with EGGNOG CREAMER!  (had to show ALL of my festive creamers some love yesterdayJ)

3:00pm:  Snack #2- Apple with 2 tablespoons peanut butter

LOVED THIS COMBO of diced apples, feta, green onions, craisins and the pecan/panko & maple/Dijon coated chicken... 

The chicken & coating came together in under 5 minutes and I was able to get some errands done while it baked at 400 for 30 minutes... 


I also whipped up a quick dressing of about 1 tablespoon of both maple syrup & balsamic vinegar to 2 tablespoons olive oil and a sprinkle of sea salt... 

The pecan-crusted chicken was SUPER crunchy with just a touch of sweetness from the maple coating and mixed perfect with the crunchy apples, tangy feta, chewy craisins and sweet dressing...PERFECT! 

6:30-7:50pm:  Beginner's Power Yoga
A great way to kick off the week...even if I went straight from "Namaste" to flying home like a banshee in order to watch "A Charlie Brown Christmas" at 8pm with Katie!
Yes, we have this on DVD about 42 times...but it's just WAY more special when you get to watch it LIVE on TVJ  

 8:30pm:  Dessert- Slow churned Peanut butter cup ice cream (in a juice glass)
