Know thyself...

Wednesday Recap:

8:00am:  Coffee with creamer

9:30am:  Breakfast- Whipped banana oatmeal with peanut butter

12:00pm:  Lunch #1 - 3 mini pitas with hummus 
Usually oatmeal holds me over for awhile, but yesterday I was READY to eat at high noon.  Yesterday just turned out to be one of those days where I was hungry every time I turned around....

1:30pm:  Lunch #2- Roasted tomato & red pepper soup with black beans

2:30pm:  Snack - 5 chocolate covered almonds 
I never EVER feel bad about eating a lot of snacks or small meals in a day as long as I'm GENUINELY hungry (and ya really gotta know yourself AND BE HONEST!!! to know whether you're actually hungry or just bored/craving what you just saw in the fridge/thirsty/etc) and yesterday I was hungry FOR SURE!

6:00pm:  Dinner- Salad 
Not SUPER inspired last night, but knew I wanted one thing:  Maple-Almond Vinaigrette!  So I whipped up the dressing and made a quick salad mix of:
  • Lettuce
  • Chickpeas
  • Carrots
  • Sauteed leeks (in place of the sauteed shallots, since I had them on hand)
  • Parmesan
  • Sliced Almonds
  • Craisins
I just LOVE the taste of the vinaigrette mixed with the Parmesan and craisins, so it hit the spot on a night when my stuffy head made nothing (except a HUGE plate of pasta with butter and cheese) appealingJ  hahahahhahahahahaha

8:00pm:  Dessert-  3 Candy Corn Cookies 
Besides this picture, Katie & I also shared that 'third' one as a snackJ  She loved these AND the salad yesterday.  My kid has a new obsession with LETTUCE.  NOT gonna complain about THAT!J

And no exercise yesterday.  Figured I'd give my body a rest with this little cold.
