Fiesta, Day 2...

Monday Recap:

8:00am:  Coffee with creamer

9:30am:  Breakfast- Multigrain waffle with flaxseed & butter

12:30pm:  Lunch-Celery with peanut butter
How this satisfied me when all I was dreaming about was a large bowl of PASTA for lunch was beyond meJ  But it worked....and we LIKE WHATEVER WORKS!

3:00pm:  Snack #1:  Cheese stick...

4:30pm:  Snack #2-  1/2 Fiber 1 Protein bar
I knew I was going to be eating dinner REALLY soon, but I was getting PAST the STARVING point and figured I'd have this half to help put the brakes on before I scavenged the kitchen.   Again:  WHATEVER WORKS!

 5:30pm:  Dinner- FIESTA SALAD
In true "Cinco de Mayo" week fashion, we had:
  • Chicken coated in taco seasoning, diced
  • black beans
  • roasted red peppers
  • cheese
  • tortilla strips
  • red lettuce

6:30-8:00pm:  Beginner's Power Yoga

Tonight's dinner should be interesting.  It involves 2 favs:  Avocado & Quinoa!  Stay tuned...
