8:00am: Hot Lemon Water
9:30am: Coffee with creamer
11:30am: "Brunch"- Spinach "pizza"
OK...so I think since we had not one, but TWO dinners (and TWO desserts!) with my Aunt & Aunt-in-law's on Easter Sunday, I was genuinely not even hungry until almost lunch time (ummmm...ya THINK that's a sign of too much food??J) So by the time I was hungry, I quickly whipped up one of my more unattractive dishes...(sorry 'bout that!)
But hear me out: This has all the flavors of pizza...without the crust! In a pan drizzled with VERY little olive oil, mix:
- 1 diced garlic clove
- 1/2 can of diced tomatoes
- 1 teaspoon oregano
- handful of mini turkey pepperonis
- sprinkle of mozzarella
- 2 large handfuls of spinach
Wasn't too hungry for the rest of the afternoon...so it looked like this....
2:00pm: Snack #1- 1/4 cup chocolate trail mix
3:30pm: Snack #2- Apple (no pic)
5:30pm: Dinner- Honey Mustard Salmon with salad
- 1 teaspoon honey
- 1 tablespoon mustard
- 1 tablespoon olive oil
And in keeping with 'salad night tradition', I sided the salmon with a simple salad of lettuce & roasted beets mixed with olive oil & a sprinkle of Parmesan cheese.
6:30-7:50pm: Beginners Power Yoga class
That wraps up Monday...and in a Tuesday "preview," I must say I found it very easy to hop out of bed this morning to workout since the sun was up & ready for me and looking so beautiful this morning. I ain't gonna hate on that part of this seasonJ
