8:30am: Coffee with creamer
9:30am: Breakfast- Peach & mango smoothie
- 1 cup unsweetned vanilla almond milk
- 0% Peach Chobani yogurt
- 1/4 cup quick oats
And I went to grab some frozen pineapple from the freezer, only to come across these little mango cream bars from Trader Joe's. I thought the mango puree & little rim of sweet cream would work perfect with the peach...and it made for one delicious smoothie additionJ
10:30-11:45am: Power yoga class
1:00pm: Lunch- Cucumber & Greek olive hummus
3:30pm: Snack- "Healthy" cinnamon toast
6:00pm: Dinner- "Green juice salad"
Well, even though it wasn't "Monday salad night," the sunny & gorgeous weather put me in the mood for a light & healthy dinner with TONS of veggies. And when I spied this salad on Kristin's site & she described it as 'spa-like'? Done, done & done.
In the mix:
- Diced grilled chicken
- 1/4 sliced cucumber
- 1/2 diced green apple
- 1/2 sliced avocado
- 4 diced spring onions
- Handful slice grapes
- Dressing of lemon juice, olive oil & a drizzle of honey
This just felt so light & healthy, and the combo of green ingredients were really delicious. This was just a dinner that made me happyJ
