1 gazillion %...

Friday Recap:

6:30-7:30am:  Dance/weights/1 minute plank/jogging mix

8:30am:  Coffee with creamer

9:30am:  Breakfast-Peach & Mango cream smoothie

12:00pm:  Lunch-Cucumber with 2 tablespoons Greek olive hummus

2:30pm:  Snack #1- 5 Dark chocolate almonds 

3:30pm:  Snack #2- Honeydew 
I was tooooo tempted by the "manager's special" of a sliced honeydew at the store this week...butttt, it wasn't quite as sweet as I hoped.  It ACTUALLY made me excited for summer PRODUCE (but still NOT summer humidity!  Make no mistakeJ)

6:00pm:  Dinner-"Irish Grilled Cheese" & roasted broccoli 

And HOW is the grilled cheese "Irish," you ask???  Because it is made with Irish soda bread....

...and Irish cheese!   Which tasted like a creamy, yet dry cheddar/Parmesan hybrid...yum!

Layer up the bread with some cheese & some spinach...because why NOT throw a little extra green in there??J

And WALLAH!  Irish Grilled CheeseJ  I always thought soda bread was dense & dry, but this one was delicate & the melty cheese was a good 'glue' to hold it all togetherJ hehehehehehhee 

And why not have even a little MORE green by way of some roasted broccoli!  We haven't had this in awhile and it was soooooooooo good.  I could have eaten 2 pans worth, no joke. 

Well, that wraps up Irish Day 1...ya know, for Scott's 1 billion % Irish & Katie's 1 gazillion %.J  Oh well, I guess everyone is Irish on St. Patty's Day, right??  
We're headin out tonight for dinner, so hopefully I remember my camera since it's to one of my favorite placesJ
