Deja vu...

Tuesday Recap
(Which is...ahem, pretty similar to MondayJ)

8:00am:  Hot Lemon Water

9:15am:  Breakfast-Multigrain waffle with butter & flax

10:15am: Coffee with creamer

1:00pm:  Lunch-Cucumber with Greek olive hummus 
OK, I used a few of those blessed muligrain tortilla chips to mop up the rest of the hummus.  I just LOVE those damn things! 

3:00pm:  Snack #1:  Strawberries 
These are SOOOOO GOOD!  And I got them for 2 pints for $2.29 last week.  I did NOT expect them to be so sweet in February.  Tis the month of RED, I suppose.

4:30pm:  Snack #2:  5 dark chocolate almonds

6:00pm: Dinner- ...
It was time to bust out my old school card for one of our reliable favorites:  Spaghetti Squash Casserole.

And since I had to turn on the oven to roast the spaghetti squash, I thought I'd throw in some broccoli & cherry tomatoes (ALSO 2 crates for $2.25!) for extra FLA-VA!
The 'prep' time to roast the squash (and broccoli...and tomatoes...ect) takes awhile, but once everything is done, you just toss everything into a bowl, mix, pour into the casserole dish...

40 MORE minutes in the oven and BOOM! DONE!
It's a great dish to make in advance and then pop in the oven for a quick weeknight dinner.  Not to mention, EXTREMELY customize-able!  You can add any veggies you have on hand for a super tasty and SUPER nutritious dinner!

And this is a vegetarian dish that will certainly stick to your ribs....soooooo cheesy & yummy!

8:00pm:  Dessert- Light vanilla ice cream with MELTED COOKIE BUTTER

No workouts today.  I just wasn't in the mood, and that's OK ever so often.  (Just not TOO oftenJ)  Hope you guys have a great I can HONESTLY say at the moment I have NO CLUE if it's Tuesday or Wednesday....I guess I'm mentally on Friday along with all of youJ
